Description

This PR updates some of the tutorials, removing TODOs. In particular

  1. Update the parquet TODO in tutorial_output
  2. Update interpolation signature in explanation_interpolation
  3. Update tutorial_interpolation to new model-centric FieldSet

This PR is part of #2702

Did a review of everything - diff looks good.

For some reasons docs are failing, I think GitHub has started rate limiting. Going to see if there's a patch we can make

#2697 with the docs-clean task broke RTD as well it seems. Pushed a fix in
888245d
